Black Beluga Lentils® Truffles Ingredients
1/2 C Black Beluga Lentils®, uncooked 1 C Water 8 Oz Dark Chocolate, finely chopped (70% cacao or darker, your preference) 1/2 C Heavy Cream 1 Tsp Vanilla 1 Tbsp Maple Syrup 1/4 C Cocoa Powder, Powdered Sugar, OR Finely Chopped Nuts of your choice
Preparation Black Beluga Lentils® Puree
Bring water to a boil, add the lentils, and simmer slowly for 25 minutes.
Let cool slightly.
Add vanilla and maple syrup to the cooked lentils, and purée the mixture in a food processor.
Put chopped chocolate in a medium-sized heat-proof bowl. Set aside.
Heat heavy cream over medium heat until hot but not boiling.
Pour chopped chocolate into the hot cream and let sit for 5 minutes.
Whisk together until smooth and shiny.
Stir in puréed lentil mixture, blending completely.
Spoon ganache into shallow baking pan lined with parchment paper and smooth to an even depth.
Refrigerate until firm, at least 30 minutes.
Use a tablespoon or 4-teaspoon-sized cookie scoop to portion ganache into individual pieces.
Roll into balls and refrigerate for at lest 30 minutes.
In a shallow dish put cocoa powder, powdered sugar, or finely chopped nuts and roll each truffle to coat it.
Refrigerate or freeze in an airtight container to store.
