Black Beluga Lentils® Truffles

1/2 C Black Beluga Lentils®, uncooked
1 C Water
8 Oz Dark Chocolate, finely chopped (70% cacao or darker, your preference)
1/2 C Heavy Cream
1 Tsp Vanilla
1 Tbsp Maple Syrup
1/4 C Cocoa Powder, Powdered Sugar, OR Finely Chopped Nuts of your choice

Black Beluga Lentils® Puree

  • Bring water to a boil, add the lentils, and simmer slowly for 25 minutes.
  • Let cool slightly.
  • Add vanilla and maple syrup to the cooked lentils, and purée the mixture in a food processor.
  • Set aside.
Chocolate Ganache
  • Put chopped chocolate in a medium-sized heat-proof bowl. Set aside.
  • Heat heavy cream over medium heat until hot but not boiling.
  • Pour chopped chocolate into the hot cream and let sit for 5 minutes.
  • Whisk together until smooth and shiny.
  • Stir in puréed lentil mixture, blending completely.
  • Spoon ganache into shallow baking pan lined with parchment paper and smooth to an even depth.
  • Refrigerate until firm, at least 30 minutes.
Making Truffles
  • Use a tablespoon or 4-teaspoon-sized cookie scoop to portion ganache into individual pieces.
  • Roll into balls and refrigerate for at lest 30 minutes.
  • In a shallow dish put cocoa powder, powdered sugar, or finely chopped nuts and roll each truffle to coat it.
  • Refrigerate or freeze in an airtight container to store.
